The finest organic ingredients are mixed in small batches. The small batch is key to gourmet, authentic, Italian gelato.
Here, Mariagrazia pours the mixture into the ‘hot mixer.’
After 24 hours, the mixture is removed to be poured into the ‘batch freezer.’
Mariagrazia removes the mixed gelato from the batch freezer. It is put in the stainless steel pans in which it will travel throughout the rest of process, continuing directly into the display case. At this point the gelato, while almost done, needs to be hard-frozen.
Mariagrazia places the pan of gelato into the blast freezer, where it stays for 10 minutes.
The final step: into the serving dish!
